Chili Garlic Oil 

Serves 4 (½ cup)

Total Time: 1 hour

Ingredients

125 grams siling labuyo (red), chopped

125 grams siling pangsigang (green), chopped*

1 head garlic, peeled

2 white onions, chopped**

½ cup water

2 tablespoons salt

1 tablespoon sugar

2 teaspoons banana ketchup*** 

2 cups vegetable oil

1. Combine siling labuyo, siling pangsigang, and garlic in a mortar and pestle. Pound mixture until broken into small pieces. Transfer to a pan. 

2. Add water and saute over low heat until dried.

3. Add salt, sugar, and ketchup. Mix well. 

4. Add oil. Fry until mixture turns dark red in color, about 15 to 20 minutes.

5. Transfer to jars. Store at room temperature for up to 5 days or in the refrigerator for 1 month.

[PH] Starting a chilli garlic sauce business during a pandemic

When Mikaela ( @mikaeladio ) tried her brother Angelo’s homemade chilli garlic sauce, she knew it was delicious enough to start a small home-based business. “We were chatting over a meal as usual, and talked about what we can do during this pandemic. I believe that every Filipino household likes to have saw-sawan (spicy dipping sauce) with their meals. We took the opportunity to start the business during this pandemic and sell online while everyone is at home,” shared Mikaela. 

At first, the siblings just made the sauce available for our family and friends, sharing about it through social media. “Orders kept coming one after another due to positive feedback from those who have tried it. A lot of people have told us that our product has the right balance of taste of the garlic and chili. Our price is also very reasonable,” said Mikaela. 

They started selling on Carousell as they found it easy to sell on the platform. Mikaela shares, “everyone is on Carousell. It’s either you’re selling something or looking for something. And that’s why we decided to post it there.”

The siblings sell the sauce during their spare time, with Angelo in charge of production, and Mikaela handling sales and marketing. She created a brand and label for their chilli. “The name ‘Chili G’s’ simply combines Chilli and G for Gelo, my brother. We wanted to make it sound simple and easy to remember,” shares Mikaela. 

Since starting last April, the siblings have sold over 450 bottles of chilli garlic. “This has greatly inspired us to continue with this business,” shares Mikaela.

How to Make Chili Oil

This garlic chili oil recipe is so easy to make and it only takes a few minutes of prep time. The longest part of this recipe is the steeping time, which is completely hands off.

  • Gather the ingredients: oil, crushed red pepper flakes, and fresh garlic cloves
  • Heat the oil in a heavy saucepan over low heat.
  • Add the garlic.
  • Add the Crushed Red Pepper Flakes
  • Heat the ingredients just until the surface of the oil is gently simmering.
  • Remove from heat and allow the mixture steep for an hour as the flavors infuse.
  • Discard the garlic.
  • Cool and store!

Tips for Making Homemade Chili Garlic Oil

Recipe tips.

  • Crushed Red Pepper spice levels can vary according to brand and freshness: Fresher crushed red pepper flakes will be stronger in heat.
  • For Milder Chili Garlic Oil, Strain the Crushed Red Pepper: The oil can get progressively hotter the longer it is stored with the dried crushed red pepper in the oil, so use caution when using older chili garlic oil.
  • Alternatively, strain the crushed red pepper flakes before transferring the cooled oil to the storage container. When straining the chili garlic oil, I recommend cheesecloth or a fine mesh strainer .
  • Don’t let the oil over power the flavor: Use neutral flavored oils or light olive oil as opposed to extra virgin olive oil if using olive oil in this recipe.
  • Don’t burn the oil! It is important to use a heavy bottom pan (I like Le Creuset Cast Iron Saucepans ) and heat the oil slowly, over low heat. You never want to “boil” the oil when making this Chili Garlic Oil.
  • Make sure to remove the garlic cloves: The garlic cloves can spoil and become rancid over time when this chili garlic oil is stored. I always remove and discard the sliced garlic cloves after infusing the oil.
  • Want to infuse this oil with herbs? Add fresh, washed and dried herbs, to the oil at the same time you add the garlic, making sure to also discard the herbs when you discard the garlic.

Chili Garlic Oil Dipping Oil Variations

Want to get creative with your Chili Garlic Oil when serving this as a dipping oil? Try a few of these variations!

Add on ingredients for dipping oil should be added just before serving and to the plate or bowl you plan to serve the oil in, rather than the storage container

  • For a chili garlic herb dipping oil , add fresh chopped herbs to the bowl or plate. I recommend thyme, rosemary, or oregano, or use a combination.
  • No fresh herbs? That’s ok! Dried Italian Seasoning works well, too
  • For a spicy, citrusy oil , add fresh lemon zest.
  • Fresh cracked black pepper and sea salt make nice additions if you want to keep this simple.
  • Balsamic Vinegar or Red Wine Vinegar can be added for an oil and vinegar dipping oil.

How to Store Chili Garlic Oil

How you store this Chili Garlic Oil is incredibly important. For best results and the safest, freshest, and longest lasting infused oil, make sure to follow these tips:

  • For best results, use a clean, sterilized glass jar to store your chili garlic oil in. To sterilize the jar, you can place it in boiling water for a few minutes, then let it air dry completely before using it – you don’t want any droplets of water in the oil.
  • Make sure to use new lids if your jar has disposable lids, or purchase jars that have glass lids that you can sterilize.
  • Weck Jars are some of my favorite jars for storing homemade condiments or spice blends in because they stack well, the lids are glass and can be reused and sterilized. They have a variety of shapes and sizes. But, any mason jar will work.
  • I don’t recommend using a plastic airtight container because the oil can stain the plastic. In this case, glass is definitely best!
  • This Chili Garlic Oil must be stored refrigerated and used within a week due to using fresh garlic.
  • Always use a clean utensil when serving oil from the jar. Dipping directly into the jar or using dirty utensils will introduce potential contaminants and can shorten the shelf life of the oil.

What oil should I use?

I recommend light olive oil if you intend to use this as a dipping oil or in Italian recipes.

For more neutral flavored oils, I recommend avocado oil or grapeseed oil.

For oils with a high smoke point, your choices are grapeseed oil (420 degrees F), peanut oil (450 degrees F), avocado oil (520 degrees F). Higher smoke point oils are idea if you plan to sauté or stir fry using the oil.

Does homemade chili garlic oil have to be stored refrigerated?

Yes, due to the concern of botulism with homemade chili oil, I only recommend storing this recipe in the refrigerated even though the fresh garlic is cooked and strained out. Better safe than sorry in my opinion!

Do I have to use garlic?

Nope! The great thing about this recipe is that you can customize it how you like. If you’re looking for a plain chili oil, simply omit the garlic in the recipe.

How long does chili oil last?

1 week when stored properly and in the refrigerator.

The FDA has recommended that infused garlic oils be used prepared fresh, used right away, and leftovers must be refrigerated and used within a week. How to Make Chili Oil Last Longer

To make this chili oil last longer, and remove the requirement of refrigerator storage, eliminate the fresh garlic and only make a simple chili oil.

When used as a dipping oil, fresh garlic can be added at the time of serving.

What are your favorite uses for chili garlic oil?

Chili Garlic Oil

Ingredients.

  • 1 cup Light Olive Oil
  • 3 Cloves Garlic, sliced (not chopped or minced)
  • 1 ounce Crushed Red Pepper Flakes

Instructions

  • Pour the light olive oil in a heavy bottomed saucepan, approximately 2 quart size is plenty large.
  • Heat the oil over low heat.
  • Add the sliced garlic cloves to the oil and stir.
  • Then, add the crushed red pepper flakes - you can vary the amount depending on how hot or mild you would like the chili oil to be. The amount listed in the recipe is for medium heat. For mild, use .5-.75 ounces. For hot, use 1.5 or more ounces.
  • Stir to combine and continue heating the oil over low heat, just until the surface of the oil is gently shimmering. You do not want to boil or burn the oil or the garlic.
  • After the oil begins to shimmer, remove from heat and allow to steep for 1 hour.
  • After 1 hour, remove and discard the garlic clove slices. This is important and required due to safety concerns.
  • The crushed red pepper can be left in the oil or strained out - it is up to you. Leaving the crushed red pepper in the oil will intensify the heat over time, so remove it if you don't want to risk the oil becoming too spicy.

IMPORTANT SAFETY CONCERNS:

I only recommend storing this recipe in the refrigerated even though the fresh garlic is cooked and strained out. Better safe than sorry in my opinion! To make this chili oil last longer, and remove the requirement of refrigerator storage, eliminate the fresh garlic and only make a simple chili oil. When used as a dipping oil, fresh garlic can be added at the time of serving.

  • For best results, use a clean, sterilized jar to store your chili garlic oil in. To sterilize the jar, you can place it in boiling water for a few minutes, then let it air dry completely before using it - you don't want any droplets of water in the oil.
  • Some of my favorite jars for storing homemade condiments or spice blends in are Weck Jars because they stack well, the lids are glass and can be reused and sterilized. They have a variety of shapes and sizes.

Gerome Panlilio quit his job as a pharmacist a decade ago to venture into chili garlic sauce business.  After attending a seminar administered by Google in 2017, he learned how to use digital technologies to develop his brand and promote it not only in the Philippines but also in other countries.

Today, his chili oil products under the brand Germano’s Chilli are available in leading supermarkets in Metro Manila.

“Prior to starting the business, I was a pharmacy assistant at a drugstore.  It came to a point that I just could not see myself retiring. I ventured into this business that my brother started in 2005.  During that time, chili garlic sauces were only available in Chinese restaurants. The idea was to bring the bottled chili garlic sauce products to homes,” says the 47-year-old entrepreneur from Quezon City.

Panlilio had to attend seminars on sales, accounting and marketing to learn how to promote his products.  “I did not come from a family with businesses.  I also did not have friends who knew about business, so I had to learn everything by myself.  I had to read books and attend seminars about marketing and accounting,” he says.

A seminar administered by Google Philippines customer solutions lead Samuel Jeanblanc in 2017 proved to be enlightening for Panlilio.

“I learned about Google My Business through a seminar led by Sam.  When Sam taught Google My Business and how easy it was to set up and it was free, I was hooked.  Google MyBusiness helped me with the branding of my product.  I was amazed at how many views and interest that came with it,” says Panlilio.

Google helped the branding of Germano’s Chilli in terms of boosting searches online.  Panlilio says he is surprised by the many monthly views and the multiple inquiries he receives each day.

“In spite of our limited resources, I have been able to supply major supermarkets like SM, Robinsons, Puregold, Rustans and Shopwise. I have had a little bit of success also in exporting my product,” says Panlilio.

Germano’s Chili now produces about 400 bottles a day and distributes the products to Metro Manila supermarkets.  With such success, Panlilio was able to transfer his production site from a small space in their vacant lot to a bigger space.  

Google, one of the world’s largest technology companies, is now helping micro, small and medium enterprises in the Philippines like Germano’s Chili discover larger markets with the use of digital technologies.

Google My Business is a free online listing on Google Maps and Search to help MSMEs connect with more customers in the digital space.  It also helps businesses build their online presence, control their business information and create a free website and posts.  It has bookings, direct contact, reviews and Q&A pages as well as an insights feature which helps businesses understand their customers better.

Other entrepreneurs who saw the benefits of Google My Business include Michelle Mariano, a former accountant from Quirino province who established Qmansi (Quirino calamansi) business and Beltran Almendral, an Igorot who sells dried pork under the brand Anito’s Dried Pork.

To encourage more MSMEs tap digital technologies, Google teamed up with the Department of Trade and Industry to launch the MSME Caravan.  The caravan will tour around the country to conduct training sessions among MSME owners on digital tools such as Google My Business and the Primer app which can help create a positive impact on their business.

“The intent is to bring all these small businesses online,” says Google Philippines country director Bernadette Nacario.

“In the Philippines, 99.5 percent of the businesses are actually MSMEs.  In fact, 63 percent of our workforce are hired by all these small businesses.  They are contributing 25 percent to our export revenue.  However, one important data that we have to be aware of is that only 1 percent of them are actually online,” says Nacario.

“The small businesses, as much as they want to go massive, cannot because they don’t understand how technology can help them.  For that, Google feels that it is an important and urgent priority.  We hope that through this campaign, we will be able to teach them the needed digital skills for them to scale and become globally competitive. We want these local entrepreneurs to be able to get a global exposure.  It is not just here in the Philippines that we want them to go, but we also want them to become globally competitive,” says Nacario.

Jeanblanc, a French national, is leading the training across the country.  “When we looked at the readiness of small businesses in this country, only 1 percent had websites and were fully digital and were able to export. The programs that we launched are really focused on helping those small businesses grow,” he says.

“We have been to more than 20 cities in eight regions.  We have trained over 2,700 MSMEs already and that number keeps on increasing.  We are very proud to be contributing to the objective of training hundreds of thousands of small businesses and bringing them online,” says Jeanblanc.

Chili Garlic Oil Recipe

Ingredients:

250 grams red chilies

3 bulbs of garlic

3 cups of cooking oil

1 tablespoon of salt

2 tablespoons of vinegar

1 teaspoon of pepper

2 tablespoons of sugar

1 tablespoon of oyster sauce (optional)

Directions:

  • Harvest and prepare the red chilies. Wash them and remove the stalks.
  • In a blender, combine the red chilies, garlic and the cooking oil. Blend for a few seconds until almost smooth.
  • Pour the chili mixture to a heated pan and let this cook for 15 to 20 minutes using low heat. Stir occasionally to avoid burning. Season with some salt, pepper, sugar and oyster sauce. Stir until well blended.
  • Then, add the vinegar. Do not stir for 3 minutes. Then, stir well and cook for another 15 to 20 minutes using low heat.
  • Turn the heat off and let them cool first before adding them into jars.
  • Enjoy the chili garlic oil as a dip, or use it as a base oil for your savoury dishes. Yum!

There are some dishes which are really so much better when spicy. For me, these are usually the dimsums and saucy dishes like kaldereta. When we like something spicy, we go to chilies. These chilies are simply cut into small pieces, added into a dish or sauce then boom! Instantly spicy.

Harvesting season is now here and there and hindi magpapatalo ang aking chilies. If you have a small garden in your home, chilies are one of the most recommended plants to have. They bear a lot of fruits which comes so handy when you suddenly want your sauce or dish to be spicy. I had 3 chili plants and got a little more than half a kilo. That’s an enormous amount when we are talking about house plants!

I’m a spice lover and I usually add red chilies to  my dishes. But since I have this large amount of red chilies on hand, making them into chili garlic oil not only preserves them, but making them yummier by nature.

Chili garlic oil became a trend since it is the best sauce for siomai and other dimsums. Now, it is used in other types of dishes, even as a sauce for plain roasted chicken or meat. You can also use this as the base oil for your aromatics.

Since a lot of people love this sauce, it is also one of the most trending businesses. Chili garlic oil usually come in air tight jars. Aside from being a yummy sauce, it can now be considered as one of the basic condiments in a table. When you’re in a resto and there is no chili garlic oil, it would recieve a 4 stars from me even with delicious food (just kidding!)

HOW TO MAKE CHILI GARLIC OIL

With just a few simple ingredients, you can make yourself some spicy and garlicky chili garlic oil which best suits a lot of dishes. I recommend you to make this sauce in large batches rather than in smaller ones. Using this recipe, this can yield up to 10 jars, depending on the size of your jars.

Start with harvesting the red chilies. Choose only the red ones, and leave the green ones in the plant to grow. Remove the stalks and wash them. Simply combine the chilies with the other ingredients to a blender or food processor. This would result to a red liquid with bits of red chilies.

Heat this mixture to cook the chilies. This step may take up to 20 minutes since we can only use low heat to avoid burning. To enhance the flavor of the sauce, I used some salt, pepper, sugar, oyster sauce and vinegar. After the chilies turned dark red, that’s when you know it’s ready.

Shelf life Of This Sauce

With proper preparation, cooking and storing, it can last from 3 to 6 months. I really love my chili garlic oil with my steamed siomai and dimsums and in almost everything! Aside from personal consumption, you can also sell these or give them as gifts!

Pinoy Chili Garlic Oil Recipe

This version of sauce is the best chili garlic oil for siomai and soup. So next time you want to spice up your cravings and can’t get a bottle from supermarket, whip it up yourself and you can get your own garlic oil that can last for a few weeks!

Mga Sangkap:

  • 250 grams ng siling labuyo
  • 3 buong bawang
  • 3 tasa ng mantika
  • 1 kutsara ng asin
  • 2 kutsara ng suka
  • 1 kutsarita ng paminta
  • 2 kutsara ng asukal
  • 1 kutsara ng oyster sauce (optional)

Paano Lutuin:

  • Iharvest at ihanda ang mga sili. Hugasan ang mga ito at alisin ang tangkay.
  • Paghaluin ang mga sili, bawang at mantika sa isang blender. Iblend ang mga ito ng ilang segundo hanggang malapit na maging smooth.
  • Ibuhos ang chili mixture sa mainit na kawali. Lutuin ito ng 15 – 20 minuto gamit ang mahinang apoy. Haluin paminsan minsan para hindi masunog. Timplahan ito ng asin, paminta, asukal at oyster sauce. Haluin ng mabuti.
  • Sunod na ilagay ang suka. Wag munang haluin ng 3 minuto. Haluin ito at lutuin ng 15 – 20 minuto gamit ang mahinang apoy.
  • Patayin ang apoy at palamigin muna bago ilipat sa mga garapon.
  • Enjoyin ang chili garlic oil bilang sawsawan o pang pritong mantika. Yum!

Garlic Chili Oil Recipe for Ramen, Dumplings, and More!

This quick and easy garlic chili oil recipe is made in minutes with a few simple ingredients!

This spicy oil is perfect for drizzling over ramen noodle bowls, sautéing veggies, dunking dumplings and potstickers, and so much more!

Garlic Chili Oil

Chili oil is a classic condiment featuring vegetable oil infused with spicy dried chili peppers.

While sesame or soybean oil are traditionally used, I like to use my go-to avocado oil and jazz up the simple oil and pepper combo with some toasted sesame seeds and crispy fried garlic.

This recipe comes together crazy fast! You’ll simply heat the oil and gently fry the garlic and sesame seeds for a minute or two until the edges are very lightly golden.

The hot oil is then poured over crushed red pepper flakes (or your favorite ground, dried chili peppers) and allowed to cool. That’s it!

Uses for Garlic Chili Oil

I LOVE using garlic chili oil as a sautéing oil and drizzling oil for ramen bowls.

You’ll find this recipe featured in my Spicy Shrimp Ramen Bowls as well as my Vegetarian Ramen . It would also be awesome with my Mushroom Ramen Soup !

Another awesome use for this spicy chili oil as a sautéing oil for noodles, vegetables, or even proteins like chicken, beef, shrimp, or tofu.

It’s also delicious as a dipping oil for dumplings and potstickers.

Since we are using fresh garlic here, it’s best to make what you plan on using within a few days (or just what you need for a particular dish or recipe).

To save it for a 3-4 days, simply keep leftover spicy garlic chili oil in a small sealed jar in the fridge. I use a mini mason jar.

The oil will thicken while chilled but thin when heated or brought to room temperature. Easy peasy!

Ingredients.

  • ¼ cup avocado oil or vegetable oil
  • 3 cloves garlic , peeled and thinly sliced
  • 1 TBSP toasted sesame seeds
  • 1 TBSP crushed red chili flakes

Instructions

  • Add crushed red chili flakes to a small heat-safe bowl and set aside. I like using crushed red pepper flakes, but multiple varieties will work here!
  • Heat 1/4 cup oil in a medium pot over medium heat.
  • Once hot, add thinly sliced garlic and pan fry, stirring often, until garlic is just beginning to turn golden, approx. 2 minutes.
  • Stir in sesame seeds and cook an additional minute until garlic is crisp and toasty. Take care not to overcook the garlic as it will continue crisping once removed from heat.
  • Carefully transfer mixture to the red pepper flake bowl. Mix well and allow to cool.
  • Use as a dipping oil for dumplings or potstickers, as a base or drizzling oil for ramen noodle bowls and soups, and as a stir fry oil for sauteeing veggies and protein. Enjoy!

Would this stay good in the fridge for a while or no

Hi Jane! I usually try to use mine within the week because I’m not sure of the food safety requirements for chili crisp. I know the jarred varieties can last a while in the fridge so I’m not sure if homemade is the same or not?

OOOOooo, this oil looks like it adds so much flavor to a dish. I’m excited to make it for my husband, he is going to want to put it on everything.

How to store the left overs

Hi Crystal! To save some for later simply keep leftover spicy garlic chili oil in a small sealed jar in the fridge. I use a mini lidded mason jar. The oil will thicken while chilled but thin when heated or brought to room temperature. I usually plan to keep and use mine within 3-4 days.

Hi Lauren! Pop it in the fridge (because of the garlic) and it should be good around the same time-frame as regular leftovers. I haven’t checked 2021 regulations if you want to give them a glance, but previously the rule of thumb was about 4 days or so for leftovers. The oil will solidify when chilled and you’ll just bring it back to room temperature before serving to have it go right back to liquid state. It’s great for using for more ramen dishes and also makes the most amazing stir fry sauce for veggies and veggie fried rice. Love it so!

Can you use fresh chillis?

Hi Tim! So far I’ve always made it with dried, but I bet it would be glorious with fresh chilis! Simply adjust amount added based on preference and you should be good to go.

How can you store the chili oil? For how long can it last in the refrigerator?

Hi Sruthi! I’m unsure about 2021’s new food safety standards so for sure check those out! For us personally, I’ll keep the chili oil in the fridge for a week or two (I make it pretty often instead of doing a big batch) and bring it to room temp before drizzling as it thickens a bit when chilled.

  • Neutral Oil: I like to use avocado oil, but you can use canola or vegetable oil. It forms the basis of the sauce, carrying the flavors of the other ingredients and making the noodles slick and glossy.
  • Garlic: A must-have for any savory dish, garlic adds a punch of flavor that permeates the entire dish. It’s aromatic and has a distinctive taste that compliments the soy sauce and vinegar. Plus, it wouldn’t be garlic chili oil noodles without some garlic!

  • Chiankang Vinegar or Rice Vinegar: This adds a tangy note to the sauce, balancing out the richness of the soy sauce and oil. If you can't find Chiankang vinegar, rice vinegar makes a good substitution.
  • Sichuan Chili Flakes or Korean Chili Flakes (Gochugaru): Chili flakes add a mild touch of spiciness with delicious chili flavor. Do not substitute it with Sichuan peppercorns which is a completely different flavor and spice.
  • Toasted Sesame Oil : For a bit more flavor, I like to add a bit of sesame oil at th very end.
  • Toasted Sesame Seeds : I add this into the oil at the very end for extra nutty flavor. Make sure you add it at the very end when the heat is off, so that they dont pop in the oil.

Sichuan Chili Flakes vs Traditional Chili Flakes

Chinese Sichuan chili flakes, or làjiāo fěn (辣椒粉), are not to be confused with regular chili flakes! Even though they’re both chili flakes, they’re both completely different. 

Sichuan chili flakes tend to be milder than standard crushed red pepper flakes. They’re also known for their vivid red color, and delicious aromatic flavor; they have a subtle nuttiness to them that truly brings the dish together. 

If you were to use regular chili flakes instead, not only would you not get that beautiful red color, but the noodles will also be a lot spicier and not as aromatic. Sichuan chili flakes store incredibly well, and are worth having in your pantry. That being said, if you can't find Sichuan chili flakes, you can substitute it with Korean pepper flakes (gochugaru), just make sure you use the coarse one and not the powder. If you are okay with your noodles being very spicy, you can also use regular chili flakes as well.

And while we’re on the topic, it’s also important to note that sichuan chili flakes and sichuan peppercorns are also completely different spices. These ‘peppercorns’ are actually berries of the prickly ash tree which belongs to the citrus family. This gives them an absolutely different flavor profile and they can’t be substituted for sichuan chili flakes. 

How to Make Garlic Chili Oil Noodles (Step by Step)

Making this incredible garlic chili oil noodles recipe at home is super easy and will give you great results every single time. Here's how to make it step by step:

Prepare the Garlic and Green Onions : Finely mince or grate the garlic, then finely chop the green onions. I like to save the whites to add into the chili oil at the end, and save the greens as a garnish on top of the noodles at the end. Set them both aside for later.

Prepare noodles: Boil the noodles as per the package instructions. I like to subtract 1 minute from the suggested time, to get a more al dente and chewy noodle. Once the noodles are cooked, drain them and set them aside.

Make the Chili Oil Sauce: In a small pot , combine all the sauce ingredients. This includes your garlic, soy sauce, Chinese black vinegar, sugar, and Sichuan chili flakes. Cook this mixture for about 3 minutes to allow the flavors to meld together.

Add In the Green Onions (Whites), and Sesame Seeds : When the chili oil is done, turn off the heat and add in the green onion whites, and sesame seeds and mix everything together. Turning off the heat ensures that the sesame seeds won't burst and pop while they are being heated. I also like to add the sesame oil now to retain the sesame oil flavor.

Add the Noodles Into the Pot and Coat the Noodles Well: Traditionally, the chili oil is poured over your cooked noodles. I like to add the noodles directly back into the pot of chili oil instead because the pot is a much bigger area to mix the noodles, and this also allows the noodles to sop up more of the oil in the pot. Make sure to stir well to ensure that every noodle is coated with the delicious, spicy sauce. 

Garnish and Serve: Finally, add the noodles into a serving bowl and garnish your noodles with chopped green onions or scallions. You can also add some protein to your dish such as beef, shrimp, or tofu. For added texture, sprinkle some peanuts or sesame seeds on top. 

Joyce's Tips For Making the Best Garlic Chili Oil Noodles

Choose the Right Noodles: For the best texture and flavor, opt for knife-cut noodles, wheat noodles, udon noodles, or spaghettini. If you're using udon, go for the frozen ones as they have a chewy texture. For spaghettini, avoid spaghetti since it's thicker and the chili oil flavor won't come through as much. Dried wheat noodles also work well, just make sure you reduce the cooking time by 1 minute as per package instructions to get al dente noodles.

Use a Neutral Oil: The recipe calls for a neutral oil. Avocado oil is a great choice because it has a mild flavor that won't overpower the other ingredients. You can also use canola or vegetable oil as a substitution.

Traditionally you pour the oil over the noodles and mix, but I actually put the noodles back into the pot and mix. I find it easier because the pot is larger, so it's easier to mix everything and you can sop every more of the sauce with the noodles this way.

If You Can't Find Sichuan Chili Flakes : You can use Korean chili flakes (gochugaru) as well just make sure you are using the coarse flakes, and not the powder.

Chili Oil Noodles

Ingredients.

  • 4 oz wheat noodles (approx. 3 cups, I like to use knife cut noodles for the extra texture, but you can use frozen udon, any wheat noodles, or spaghettini)
  • 1 stalk green onions (finely minced, save whites for chili oil, greens for garnish)
  • 2 cloves garlic (grated or finely minced)
  • 1 tablespoon Sichuan chili flakes (not Sichuan peppercorns)
  • 2½ tablespoon neutral oil (I like avocado oil)
  • 1¼ teaspoon Chinkiang vinegar (Chinese black vinegar) (or rice vinegar)
  • ¾ teaspoon sugar
  • 1 tablespoon + ½ teaspoon soy sauce
  • ½ teaspoon toasted sesame oil (add after heat is turned off)
  • ½ tablespoon sesame seeds (add after heat is turned off)

Instructions

Preparation.

  • Finely mince or grate the garlic, then finely chop the green onions. I like to save the whites to add into the chili oil at the end, and save the greens as a garnish on top of the noodles at the end. Set them both aside for later.

Boil the Noodles

  • Boil the noodles as per the package instructions. I like to subtract 1 minute from the suggested time, to get a more al dente and chewy noodle.
  • Once the noodles are cooked, drain them and set them aside.

Make the Chili Oil

(Do not add the sesame seeds yet, otherwise they will pop)

  • Cook this mixture for about 3 minutes to allow the flavors to meld together. Keep stirring to prevent burning and do not overcook it, chili flakes burns very easily.
  • Once the chili oil has finished cooking, turn off the heat and add in the whites of the green onions, ½ teaspoon toasted sesame oil , and ½ tablespoon sesame seeds and mix everything together.

Mix Everything Together

  • Add the noodles back into the pot with the chili oil and mix everything together and all the noodles are coated well.
  • Garnish with the greens of the green onions and enjoy!
  • For the best texture and flavor, opt for knife-cut noodles, wheat noodles, udon noodles, or spaghettini. If you're using udon, go for the frozen ones as they have a chewy texture. For spaghettini, avoid spaghetti since it's thicker and the chili oil flavor won't come through as much. Dried wheat noodles also work well, just make sure you reduce the cooking time by 1 minute as per package instructions to get al dente noodles.
  • The recipe calls for a neutral oil. Avocado oil is a great choice because it has a mild flavor that won't overpower the other ingredients. You can also use canola or vegetable oil as a substitution. 
  • The chili oil is a key ingredient in this recipe. You can make your own or use pre-bought chili oil like Chili Crisp or  miso chili oil . Just remember to mix in sugar, soy sauce and vinegar for added flavor.
  • If you can't find Sichuan chili flakes, you can use Korean chili flakes (gochugaru) as well just make sure you are using the coarse flakes, and not the powder.
